Hi Folks,

     This is a recipe my mother has fixed for as long as I can remember.

     The way the recipe is listed here is for microwave cooking, but if you
are not fortunate enough to own a microwave oven, it can be prepared in a
conventional oven.  First brown the ground beef and onions.  Add the other
ingredients, stirring well and bake at 350 degrees for an hour in a greased
casserole dish.  (I mix it all in a big iron skillet, and there is less mess).

     This makes about 10 servings, unless you eat it like my family does and
then it will only serve about 4 or 5.

     As with most other Southwestern dishes, you can season it to taste by
adding more or less chili powder and Tabasco.  Personally I prefer to add the
extra Tabasco at the table.  No one else in my family likes it as hot as I do,
and my wife saves out a small portion for herself before she adds the chili
powder and Tabasco. (I'm the hottest thing she can handle.) <brag-brag-brag>

     It isn't "Cajun Cookin'" the way some of you folks down there like it, but
it ain't bad....Good Eating!!!

    1  lb. ground beef
    1  medium onion, chopped
    1  can (15 oz.) cut corn,
       undrained
    1  can (16 oz.) whole tomatoes,
       undrained
    1  can (15 oz.) pitted ripe olives,
       drained and halved
    1  can (8 oz.) tomato sauce
    1  cup yellow cornmeal
  1/4  cup butter or margarine
1 1/2  teaspoon salt
  1/4  teaspoon pepper
    2  eggs
    1  cup milk
    1  tablespoon chili powder
    2  tablespoons Worcestershire sauce
       A few drops of Tabasco (Be careful!)


1.  Crumble ground beef into 2 1/2 quart glass caserole dish.  Add onion.

2.  Microwave (high), 5 to 6 minutes or until meat is set, stirring once.
    Drain.  Stir to break meat into small pieces Add corn, tomatoes, olives,
    tomato sauce, cornmeal, butter, salt and pepper; mix well.  Cover with cas-
    serole lid.

3.  Microwave (high) 10 to 11 minutes or until steaming hot, stirring once.
    Beat eggs lightly; stir in milk.  Stir into cornmeal mixture along with
    chili powder, Worcestershire sauce and Tabasco.  Cover.

4.  Microwave (high) 11 to 12 minutes or until set, stirring once or twice.
